
Cheese pancakes made with kefir
Description
The baking is simple and quick. Usually, I make cottage cheese pancakes using just cottage cheese, flour, and egg. But recently I've noticed that kefir makes the batter lighter, and the finished pancakes turn out more tender. For making kefir cottage cheese pancakes, I recommend using full-fat cottage cheese (preferably homemade), any kefir (I like the 1% variety), a small egg, and a bit of raisins. You can substitute the raisins with dried apricots. The baking is ready. Serve at the table.

Prepare the ingredients: sift the flour through a sieve (so the dough will be lump-free), and pour boiling water over the raisins to soften them.

Mash the cottage cheese well with a fork (I always use either homemade cottage cheese or 9% fat). If your cottage cheese is dry, blend it with a blender. Pour kefir into the cottage cheese.

Then add the egg, sugar, salt, and raisins to the mixture. Next, add the sifted flour. Mix with a fork (or blender) until smooth. The dough should have the consistency of thick sour cream.

Form round cheese pancakes (in the shape of a patty). Lightly coat them in flour. You can shape them right in your hand. If desired, you can trim the edges with a knife to make the cheese pancakes perfectly round.

Heat vegetable oil in a frying pan. Fry the cheese pancakes over medium heat for 3 minutes on each side, covered with a lid.

The finished cottage cheese pancakes made with kefir will be golden brown on the outside but remain tender inside. Serve with sour cream, jam, honey, or condensed milk.
