
Cheese pancakes made from homemade cottage cheese
Description
Homemade baked treats for tea. Farmer's cheese pancakes (syrniki) are a delicious dessert made from cottage cheese, enjoyed by both adults and children alike. It's best to prepare syrniki using high-quality, slightly dried cottage cheese (you may want to press it through a sieve beforehand). They can be eaten both hot and cold. This is a traditional dish of Belarusian, Ukrainian, and Russian cuisines. Serve warm or chilled. Perfect with tea.

1. Of all the dishes I make from homemade cottage cheese, I especially love cheese pancakes. They turn out very dense and delicious. Nowadays, it's very difficult to find good quality cottage cheese in stores; store-bought cottage cheese often results in cheese pancakes that fall apart.

2. Homemade cottage cheese is usually coarse-grained and can be sieved. I prefer using cottage cheese without sieving it.

3. Mix all the ingredients and knead until smooth. Use as much flour as the cottage cheese requires (if it's wetter, more flour will be needed).

4. Moisten your hands and shape small round pancakes. Before placing them in the pan, coat both sides in flour.

5. Fry on both sides in vegetable oil until golden brown.

6. Transfer everything to a separate plate. If you want to make sure the cheese pancakes are thoroughly cooked, cover them with a lid after flipping them to the second side.

7. Before serving, you can dust with powdered sugar. I don't add much sugar because they can burn during frying. I compensate for the lack of sugar with a sweet sauce or powdered sugar.
