
Syrniki without flour and semolina
Description
Delicious pastries for the whole family. If you want the syrniki to be smooth and without cottage cheese lumps inside, blend the mixture with an immersion blender. Adjust the amount of sugar to your taste, but it is still better to serve them with homemade jam or honey than to increase the amount of sugar in the recipe. They can be served with tea or coffee.

To make syrniki, prepare all the necessary ingredients. Either corn starch or potato starch will work, but corn starch is healthier.

Mash the cottage cheese with a fork with large tines until more uniform.

Add slightly heaped cornstarch and sugar to taste.

Mix the cottage cheese mixture once more with a fork until all ingredients are evenly combined, then let it rest for about 10 minutes before baking. If you like, you can stir raisins and vanilla into the mixture.

Slightly moisten your hands with water, take a small amount of the curd mixture, shape the syrniki to the desired size, and fry them in a minimal amount of vegetable oil for about 2 minutes on each side. Syrniki should always be fried over low heat so that the crust turns golden brown.

Serve the finished flourless syrniki (without wheat flour or semolina) right after cooking, with jam, syrup, or honey.
