
Gluten-free, sugar-free cottage cheese pancakes
Description
Baking comes together easily and quickly. You can make delicious syrniki with a delicate texture—and good for you—without sugar or wheat flour. Rice flour and sugar substitutes are ideal for this. I assure you, you won’t notice the difference. Even though rice flour has no gluten, the dough stays pliable and easy to work with. Take note—the bake is ready. Serve.

Take all the ingredients for making syrniki.

Put the cottage cheese in a bowl. It should not be very sour, very wet—or, conversely, too dry.

Add the egg, salt, and sweetener to taste. This can be fructose, sorbitol, or xylitol.

Mix the curd mixture thoroughly by hand or blend it in a blender.

Add rice flour.

Mix all ingredients for the syrniki batter.

From the prepared dough, shape flatbreads and coat them in flour. Place on a hot frying pan with sunflower oil.
