To make cheese crisps, any type of hard cheese will work. Grate it on a coarse grater.

Take non-stick baking parchment so the cheese won't stick during cooking, and line a baking sheet with it. Spread the grated cheese on it in a circle. Preheat the oven to 160°C and put the baking sheet with the cheese inside. Bake for about 10 minutes until fully melted. Remove the cheese from the oven and let it cool slightly.

To form the little plates, you will need a glass or a small pot. It all depends on what size and shape you want the plates to be. While the cheese is still hot and pliable, place it on an upside-down dish. Gently press the cheese circle around the edges with your hands. Wait until it has completely cooled, then remove the baskets.

Ready-made cheese baskets can be filled with any filling. Ricotta with herbs works beautifully, or any salads of your choice.
