
Cheese Platter for the Year of the Horse
Description
Perfect for the table and for drinks. For New Year's Eve, prepare a cheese platter together with your family and friends. Don't forget the children either—they love such colorful dishes shaped like animals. If you have tart-sweet berries on hand—cranberries, lingonberries, currants—you can cook jam from them and serve it with the platter. Add any ingredients that highlight the cheese flavor. Serve the appetizer at the table.

Step 1

Prepare the listed ingredients. Buy different types of cheese: Camembert, Dor Blue, Suluguni, Dutch, etc. You can choose nuts to your taste.

From hard cheese, cut out a horse’s head. Using a ballpoint pen refill, make the eyes and nose. Place on a plate or serving board.

Slice the Dor Blue and Camembert into slices, leaving semicircular tail ends, and arrange them at the far end of the plate — this will be the horse’s hindquarters. Slice the remaining Camembert and place it beneath the head — this will be the neck.

Divide the braided cheese into sections, then pull them apart by hand into thin “strands”—use the Suluguni to form the horse’s mane. Dice the Dutch cheese or Gouda into small cubes and fill the body.

From Suluguni, shape the horse’s tail, and from hard cheese—the legs and hooves.

Garnish the slices with grapes and nuts and fresh herbs. The dish is fully ready to serve!
