
Cheese with Asparagus and Quail Eggs

Step 1

In a large pot, pour in the olive oil and add thinly sliced onion. Once the onion has softened, add the asparagus spears, cut in half lengthwise. Cook for approximately 2–3 minutes, then add salt and pepper. Let cool.

Cut the Montasio into round slices. Place the first cheese round in the center of the skillet. Add the vegetables, then cover them with the second cheese slice.

Let the cheese melt a little, then flip quickly and let the other side melt a little too. Remove from heat.

Place the cheese and asparagus in the center of the plate. Arrange hard-boiled quail eggs and the remaining asparagus around the edges — this will make the dish beautiful and appetizing.

The Montasio cheese used should be 5–6 months old and have a soft texture. Asparagus tips and quail eggs give this recipe a very distinctive aroma.
