Description
Here is a simple recipe for making "Sirtaki" cheese at home. Whisk sour cream with eggs, then add the mixture to boiling milk and cook everything until it reaches the desired "cotton-like" consistency. Then press the cheese curd to remove excess liquid and place it under weight in the refrigerator for 24 hours. After 24 hours, the cheese is ready! Good luck. Serve with herbs and sauce.

Pour the milk into a large saucepan, add the salt, and stir. Bring everything to a boil. In a separate bowl, whisk together the sour cream and eggs.

Carefully add the sour cream with eggs to the boiling milk. Keep over the heat for 2–3 minutes until the sour cream starts to curdle into flakes.

Remove the pot from the heat and strain the mixture through cheesecloth. Squeeze out the resulting liquid and let it cool.

Wrap the mixture in cheesecloth, place under a weight, and leave in the refrigerator for 24 hours.
