
Cheese with herbs
Description
It works for both special occasions and everyday meals. If you make this cheese in the evening, you’ll have excellent sandwich cheese for breakfast. To make herb cheese, you’ll need a bunch of fresh herbs (parsley, dill, cilantro), plus milk and 2.5% fat kefir. These ingredients yield a nice piece of about 200 grams.

Pour the milk and kefir into a saucepan; do not bring to a boil—heat gently until it gradually begins to curdle.

Whisk the eggs with salt.

Pour the eggs into the milk-kefir mixture in a thin stream, stirring.

Cook for another 10 minutes until the whey separates.

It should rise to the top.

Meanwhile, chop the herbs.

Remove the milk-egg mixture from the heat. Add spices and minced garlic to the herbs.

Place cheesecloth in 4 layers in a colander, put the mixture on top (I've already added the herbs), and let the water drain off.

Then hang the cheesecloth so the remaining water drains off; you can also squeeze it out.

Now place the cheese with herbs in a container and put a weight on top. Refrigerate overnight.
