
Goat's Milk Cheese with Egg

Prepare the listed ingredients. Before cooking, it is advisable to let the goat milk stand at room temperature for at least 4–5 hours so that it sours slightly.

Beat the chicken eggs into a kazan or a pot with a nonstick bottom. Add salt and whisk with a whisk or a fork.

Pour in the goat's milk, stir, and place the container on the stove.

Bring to a near boil, then reduce the heat to medium. Add the lemon juice and heat the entire mixture for 5–10 minutes.

During this time, both the egg mixture and the protein in the milk will coagulate, forming curds and whey.

Line a colander or sieve with a double layer of cheesecloth and pour all of the mixture from the cauldron into it. Drain, then tie the cloth into a bundle. Hang it over the sink for 20 minutes so the excess whey drains off.

Place the cheese mass in a bowl and mix in the butter while it is still hot. Then place it back in cheesecloth and hang it in the shape of a ball. In this form, you can leave the cheese overnight in the refrigerator; it will firm up.

Cut the chilled cheese into slices, rinsing the knife after each cut. Place on a plate and serve with vegetables and salad.
