
Homemade Kefir Cheese
Description
A delicious appetizer for any gathering. For this recipe you will need good-quality kefir from a trusted producer with a high fat content. In the end you will get a cottage cheese spread every bit as good as expensive, well-known brands. For breakfast—it is an excellent spread for sandwiches. The appetizer is ready. Serve immediately.

To make homemade kefir cheese, we will need kefir with 2.5% fat content, but a fattier one will also work.

Freeze the kefir in advance, then carefully cut open the factory packaging.

Line a sieve with cheesecloth folded in two or three layers, and place the frozen kefir on the cheesecloth.

Wrap the kefir in cheesecloth on all sides and leave at room temperature until fully thawed. Place a sieve in a deep bowl into which the whey will drain.

When the mass has completely thawed and the whey has almost fully drained, the cheese is ready for the next stage of preparation.

Cover the cheese with a flat saucer and place a weight on top. Leave the preparation in this position for 6–8 hours.

After some time, transfer the cheese into a convenient bowl and mix it thoroughly. If desired, add salt, season with herbs and spices, and serve!
