
Homemade Cheddar Cheese

A delicious appetizer for any gathering. Of course, for your first steps in cheesemaking it's better to choose simpler options, however the recipe for making cheddar cheese at home is also within reach for non-professionals. It can be served warm or chilled.

1. Pour the milk into a large pot and heat it in a double boiler (you can also use the stovetop, of course).

2. Add the starter culture and ferment according to the amount of milk. Leave for about an hour so the starter can begin to work.

3. Cut the resulting curd into small cubes. Heat the mixture over low heat until it reaches approximately 40 degrees.

4. When the curd begins to firm up, carefully transfer it to a separate container. The whey can also be used for making various baked goods.

5. Now the curd can be returned to the pot and warmed for about another hour.

6. Prepare cheesecloth or fabric to let excess whey drain off. At this stage of the homemade cheddar cheese recipe, you can add a little salt to taste.

7. After approximately 30-35 minutes, when the salt has been absorbed, you can put the future cheese under a press, having first wrapped it in thin cloth or cheesecloth.

9. For proper cheese pressing, increase the load gradually: start with a little weight, then add more every 2–3 hours. After 24–26 hours, the cheese will be firm.

10. Now you can cover the cheese with a thin layer of cheesecloth, having first soaked it in warm water. Start with the top.

11. After the cheesecloth has been placed on both edges, brush the top with a small amount of butter or other fat and put under the press for approximately 1.5 hours. Then place cheesecloth on the sides of the head and return to the press, this time for 10–12 hours.

12. Here is a classic homemade cheddar cheese recipe. Now it needs to be left to ripen in a cool, humid place (around 12°C and 85% humidity). For the first 2 months, the wheel should be flipped daily. The cheese will be ready in 7–8 months, though it can continue aging for up to a year.
