
Beetroot in the oven
Description
The dish is prepared without unnecessary complications. This beetroot is so elegant and appetizing in appearance that you wouldn't hesitate to serve it even at a festive table! It can be served either hot or cold, as you prefer, and is sure to receive genuine applause. Overall, I'm certain this simple oven-baked beet recipe will come in handy more than once. Wash the beetroot and bake in the oven until cooked. It can remain slightly crunchy — that's even better.

While the beet is baking, pour boiling water over the prunes and let them soak for 10 minutes. Then drain them in a colander.

Cut each beet in half lengthwise and remove the flesh. Set the halves aside and cut the flesh into small cubes or grate it.

Peel and mince the garlic.

Lightly toast the walnuts in a dry hot skillet and then chop them as well.

Finely chop the prunes.

Mix the grated beet, prunes, nuts, and garlic—this will be the filling.

Grate the cheese on a grater.

Whisk the cream with the egg, add the cheese, a little salt, pepper, and nutmeg.

Lightly salt the beet halves on the inside, place them in a baking dish greased with butter, fill with stuffing, and top each with a creamy cheese sauce. Put in an oven preheated to 200°C and bake until a golden-brown cheesy crust forms.
