
Chinese-style Pig Ears
Description
Chinese-style pig ears can be served with a chili sauce. To make it, blend 3–4 chilies (trim off the stems and, if desired, remove the seeds), a clove of garlic, a spoonful of rice vinegar, a small piece of peeled ginger, salt, and pepper in a blender. The sauce turns out very spicy. It can be served warm or chilled.

1. First, clean the ears thoroughly. Rinse the cleaned ears under running water. Then place the ears in a pot and add peeled ginger, vinegar, soy sauce, sugar, cinnamon, star anise, and Chinese five-spice powder. Pour in water and bring to a boil. Then reduce the heat to low and simmer for 5–6 hours. The ears should be tender.

2. Remove the ears from the broth. Strain the broth. Cut the ears into thin strips and place them in bowls.

3. Wash and tear the cilantro. Set aside a few sprigs for garnish. Pour a small amount of broth over the sliced pig ears, add a pinch of white pepper, and garnish with cilantro. Chinese-style pig ears are ready!
