
Pig Ears with Beer
Description
Perfect with meals and drinks. Although pig ears are an acquired taste, you can prepare many different dishes from them: fried ears, stuffed ears, pressed ears, smoked, marinated, in soy marinade, spicy pig ears. Before cooking, raw pig ears need to be singed, cleaned of fuzz, bristles, and growths with a stiff brush, and rinsed thoroughly. They should be boiled for about 2 hours in boiling salted water with spices and seasonings. The appetizer is ready. Serve immediately.

Singe fresh pig ears over a gas burner flame. Clean off the bristles with a sharp knife or brush, and rinse thoroughly under running water.

Place the cleaned ears in a pot, add an unpeeled whole onion, crushed garlic, a bay leaf, allspice berries, coriander seeds, khmeli-suneli, and salt. Pour in boiling water and simmer over medium heat for 1.5 to 2 hours.

The finished pork ears should be soft. Remove them from the broth and place them in the refrigerator for several hours.

From the remaining ingredients, prepare the marinade by thoroughly mixing all the dry spices, then adding olive oil, vinegar, and soy sauce. The finished marinade should be smooth and uniform.

Place the julienned pork ears in a sturdy polyethylene bag, tie it tightly, and mix the contents with the marinade. Leave on the kitchen table for 30 minutes, then repeat 2–3 more times.
