1. The pork cheeks need to be thoroughly cleaned, rinsed, and dried.

2. Pour cold water into a saucepan, add all the spices (except paprika), place over heat, and bring to a boil.

3. Place the pieces of fatback into the boiling brine, bring back to a boil, reduce the heat to low, and simmer the fatback for 45–60 minutes, depending on the thickness of the pieces.

4. Let the finished salo cool in the brine to room temperature.

5. Sprinkle the cooled fatback with paprika on all sides. Wrap in plastic wrap or place in a container, and store in the refrigerator or freezer, depending on how long you plan to keep it.
