
Pork rolls with apple
Description
The dish is prepared without unnecessary complications. Use firm, tart apples of hard varieties for the filling. Cut them into not-too-small pieces, including the peel, so they don't turn into a puree. The rolls turn out very sophisticated in taste and look great on a festive table. The finished dish can be served.

Cut the bacon into strips and place it in a pan to fry over medium heat. Add the onion and cook, stirring, until the onion becomes translucent. Add the diced apples and heat for a couple of minutes. Remove from heat, season with salt and pepper to taste.

Spread mustard over the pounded piece of meat, using spicy varieties. Place a spoonful of filling on one end and roll it up into a roll. Repeat with all the cutlets. If desired, you can tie the rolls with kitchen twine.

Drain off the excess fat and pour wine over the meat. Boil over high heat until half the wine has evaporated, then add half a cup of boiling water and season lightly with salt. Stir in the mustard and sour cream, mix well, and simmer the rolls for about 20 minutes, turning occasionally.

Remove the rolls onto a plate and keep warm. Add finely grated oatmeal cookies—classic, without additives—to the sauce. Alternatively, replace them with gingerbread or ginger cookies—natural, without flavorings. Simmer until the sauce thickens and the cookies dissolve completely. If you desire a perfectly smooth consistency, strain the finished sauce through a sieve or blend it with a blender.
