
Pork ribs in tomato sauce with prunes
Description
The recipe won't take much time. Choose meaty ribs with a good layer of meat. These ribs go well with a side of potatoes or fresh vegetables. Serve them hot. I cook them in a frying pan, but you can also use a cauldron or roasting pan. Serve hot.

1. Use pitted prunes, pour boiling water over them, and let them sit for some time. Thoroughly wash the ribs, then pat them dry. Heat a frying pan with vegetable oil and sear the ribs on both sides until golden brown.

2. Transfer the ribs to another skillet. Peel the onion and cut it into large cubes, then sauté it in the same skillet where you cooked the ribs.

3. Drain the prunes, slice each one into thin strips, add them to the ribs, and also add the onion sautéed until soft.

4. Add bay leaf and black peppercorns to the pan.

5. Mix the tomato juice with honey, stir thoroughly, and pour into the pan with the ribs.

6. Place the meat over heat and cover with a lid; after it comes to a boil, reduce the heat and cook for about 1 hour.

7. After 1 hour, add salt to taste and heat for a few more minutes.

8. Place the ribs on a plate, pour over the sauce in which they were braised, and serve hot.
