
Pork ribs stewed with vegetables
Description
This recipe won't take much time. For this simple dish of pork ribs stewed with vegetables, we don't need many ingredients—we just take the ribs and whatever vegetables we have on hand, either from the garden or the fridge. Personally, I had a cabbage harvest this year, so I've been lucky enough to discover many delicious cabbage-based recipes, including this excellent one. However, the ingredient list I've provided here is in no way strict—you can freely add your own ingredients to this pork rib and vegetable stew. For example, I've since prepared this dish several times with the addition of tomatoes and bell peppers, which makes it even more delicious and aromatic. So don't be afraid to experiment—everything is in your hands. Serve hot.

Rinse the pork ribs under cold water, then cut them into portion-sized pieces of 2-3 ribs each.

In a skillet or a heavy-bottomed pot, heat the vegetable oil and sear the ribs until a golden-brown crust forms.

Peel the onion and slice it into half-rings.

Peel the carrots and grate them on a Korean carrot shredder.

Finely chop the cabbage.

Place the chopped onion and carrot into the pot with the ribs, add salt, and sprinkle with black ground pepper.

While the ribs are stewing with onion and carrots, we chop the fresh herbs and garlic.

Now place the cabbage, garlic, and herbs into the pot, mix well and simmer for about 10–15 minutes. Then add the sautéed tomato paste, salt and pepper to taste, and a little water if needed. Simmer the ribs with the vegetables over low heat until fully cooked. Serve with any side dish of your choice.
