
Pork ribs with chickpeas
Description
Pork ribs with chickpeas are easy to prepare. But you'll need to be patient, as it will take at least 3 to 3.5 hours before you can serve the dish. I assure you, your patience will be rewarded. The tender, soft, and aromatic meat with chickpeas will surely delight all lovers of legumes. If your ribs are very fatty, you won't need any sunflower oil for frying. However, I prefer lean pork. Prepare the ingredients for cooking pork ribs with chickpeas.

Wash the pork ribs, dry them, and cut into portion-sized pieces along the bone. Pour sunflower oil into a heavy-bottomed pot or cauldron and heat well. Then add the ribs.

Sear the ribs for 10-12 minutes.

Peel, wash, and finely chop the onion. Add it to the pot with the meat. Sauté the ribs with the onion for a short while.

Rinse the chickpeas and cover with cold boiled water for 8-10 hours, or preferably overnight.

When the chickpeas have swollen, drain the water, rinse the peas with fresh water, and place them in a pot with the ribs and onion.

Pour boiling water over the meat and chickpeas so that the water level is 2 centimeters above the contents of the pot.

Grind cumin and coriander seeds in a mortar or by any other method. Add to the pot. Wash a few parsley sprigs and add them as well.

Cover the pot with a lid and simmer the pork ribs with chickpeas until tender for 1.5–2 hours. Remove the parsley 30 minutes before the end of cooking, then season with salt and pepper to taste. Let the dish stand, covered, for 30 minutes to allow the flavors to meld.
