4. Season the ribs with salt and pepper to taste. Place them at the bottom of a heatproof dish (make sure it has a lid). Season the sliced potatoes with salt to taste and place them on top. Peel and slice the carrots into rounds or strips. Wash, dry, and chop the herbs. Add them on top into the dish.
