
Pork ribs with mustard
Description
The dish is prepared without unnecessary complications. Use a grill to cook it. Immediately after grilling, brush the ribs with mustard and let them rest for 10 minutes before serving. During this time, the meat will absorb all the juices and flavors of the mustard. Serve the ribs hot with vegetables (fresh or roasted) and herbs. The dish is now ready to be served.

1. First, make the sauce: pour a cup of mustard into a bowl, add apple cider vinegar, sugar and honey, ketchup, Worcestershire sauce, hot sauce, black and white pepper, and thoroughly mix everything with a whisk. The finished sauce can be stored in the refrigerator for up to a week.

2. In another bowl, mix the dry ingredients: sugar, paprika, salt, ground celery seeds, cumin, garlic powder, chili, mustard and onion powder, black pepper.

3. Wash the meat and remove the membrane from the back of each rib rack. Brush both sides of the meat with mustard using a brush.

4. Place the meat on parchment paper and foil, and generously sprinkle dry spices on both sides.

5. Preheat the grill with a smoking function (or a smoker) to 170 degrees. Once the wood has burned down and smoke appears, place the meat inside, cover with the hood, and cook for 2-3 hours. Then remove the hood and continue cooking for another 2 hours, spraying the meat with juice every half hour.

6. Place the meat on a cutting board and coat both sides with the prepared sauce, applying it in several layers if desired.
