Of course, it's best to prepare this dish outdoors, or at least at a summer cottage—modern grills and barbecues allow you to almost completely replace the traditional campfire and cauldron. And anyone who has ever lit a campfire outdoors surely knows that this method of preparing pork ribs over coals isn't the best idea for a traditional campfire. 1. Cut the meat into pieces so that you have a whole piece of meat with a rib running through it. Sprinkle salt, pepper, and spices on all sides.

2. Leave at room temperature for some time (preferably for an hour).

3. Grill on all sides. Then reduce the heat, leaving only embers, and let it cook for another 40-50 minutes.
