
Pork ribs on the grill
Description
The dish is prepared without unnecessary complications. Try cooking pork ribs using this recipe. Grilled ribs turn out especially tasty and juicy. At our summer house, this dish is probably the most popular during summer. You chop some vegetables, pour yourself a glass of good lager, grill some ribs — ah... Try it yourself. The dish is ready to be served.

1. Thoroughly rinse the pork ribs, remove the tendons and membranes, then cut into portion-sized pieces.

2. Take a large pot, add bay leaf, allspice, and cloves. Place the ribs on top of the spices and pour in enough water to cover. Bring the water to a boil, then reduce the heat. Simmer the ribs until tender (about 45 minutes for young meat, around 1 hour for older pork ribs).

3. While the ribs are simmering, preheat the grill and prepare the sauce. Pour tomato paste, soy sauce, Worcestershire sauce, and vinegar into a small bowl or cup. Add oregano, minced garlic, and, if you prefer it spicier, some pickled chili pepper. Be careful with the hot pepper—don't overdo it, and remember to remove the seeds! Mix all the ingredients until smooth. You can optionally simmer the finished sauce over low heat for a short time, but it's not necessary.

4. Dry the cooked pork ribs, brush them with the prepared sauce, and place them on the grill. Sear for 10 minutes on each side, turning occasionally to prevent burning.
