
Pork barbecue ribs
Description
Grilled pork ribs as a dish are perfect for a group gathering to relax outdoors or at a cottage.

The day before preparation: Prepare the ribs. Trim excess meat from the ribs.

Loosen the thin membrane on the ribs (using a skewer or other tool).

Remove the membrane from the ribs.

Sprinkle each side of the ribs with 1/2 cup of spices.

Place the ribs on a large sheet of foil.

Wrap the ribs tightly in foil and place them in the refrigerator for 10-12 hours.

Day of preparation: Soak wood chips in water for one hour before cooking the ribs.

Prepare the grill. If your grill has racks for ribs, that's great.

Remove the wood chips from the water and place them on the coals.

Place the ribs on the grill in special racks, or directly on the grate if racks are not available. The heat source should be as far away from the ribs as possible. Close the lid. Every 20 minutes, open the lid and turn the ribs over. Rotate the ribs' positions on the rack.

After about an hour, the meat should brown and significantly reduce in size.

Remove the racks and place the ribs on the grill grate. Turn and baste with sauce until the sauce is gone.
