Pork ribs in olive sauce

Description

The recipe won't take much time. You can use homemade or store-bought tomato sauce. Serve the ribs with potato side dish or porridge, or with fresh or roasted vegetables. Don't forget to remove the membrane from the back side of the ribs if it hasn't been removed already before purchase. Serve hot.

    1. Wash the pork ribs, remove the membrane from the back if present. Pat the meat dry, then season with salt and ground black pepper.

    2. Using a sharp knife, cut the ribs into separate pieces.

    3. Heat vegetable oil in a saucepan, add the ribs, preferably in a single layer.

    4. Sear the ribs on both sides until golden brown.

    5. Transfer the meat to a plate and fry the rest.

    6. Return the pot to the heat, finely chop the onion and add it to the pot, sauté for 8-10 minutes. Add the minced garlic, rosemary, and sage, and cook for another 1-2 minutes.

    8. Pour in the red wine, bring to a boil, and cook for 4-5 minutes to allow the alcohol to evaporate.

    9. Peel the tomatoes and finely chop them. Place the tomatoes, tomato sauce, and tomato paste into a saucepan. Add bay leaf, salt, and pepper to taste. After boiling, simmer everything over low heat, covered, for 3-3.5 hours.
