
Pork ribs on the grill
Description
Ribs can be separated into individual pieces or grilled whole. I serve them with tomato sauce, green sauce (made from fresh herbs), as well as berry sauce. Cook the ribs until they develop a rich caramelized crust; this makes them much more flavorful and ensures they won't remain undercooked.

Wash the pork ribs and remove the membrane from the inner side of the ribs, as this will make them more tender.

Add all the ingredients to a bowl and mix well.

Rub the ribs with the spice mixture by hand, thoroughly massaging it into all surfaces and between the ribs.

Transfer the ribs to a bowl and let them sit for at least 30 minutes, but preferably longer. You can leave them overnight.

Cook the ribs at a low temperature, not over open flame but on glowing embers, for 1-1.5 hours, turning occasionally.

Serve the hot ribs at the table, straight from the grill, with fresh vegetables, sauce, and herbs.
