
Pork kidneys with pickled cucumbers
Description
The dish is prepared without unnecessary complications. Many people wrongly avoid cooking such a delicious offal as kidneys, fearing a strong odor. The odor is removed by triple boiling and frying sliced kidneys, so be sure to try this dish and treat your family. The finished dish can be served at the table.

Prepare the listed ingredients.

Rinse the pork kidneys, cut them into cubes or strips, and soak in cold water for 20 minutes. Then drain the water, add fresh water, and let them soak for another 20 minutes.

Transfer the sliced kidneys to a cauldron, add bay leaves. Pour in water and boil for 20 minutes. Drain the water and add fresh water. Boil for another 20 minutes.

Drain the water once again—the smell will be unpleasant, so it's advisable to ventilate the kitchen. Add fresh water for the third time and boil the kidney slices for another 20–30 minutes until tender, adding salt.

Peel the onion, rinse it in water, and slice it into half-rings. Sauté the onion slices in vegetable oil in a pan for about 2-3 minutes.

Add the boiled kidneys to the pan and fry for another 3-4 minutes.

Slice the pickled cucumbers into half-rings, removing the ends. Add the slices to the container with the other ingredients and mix well. Simmer for about 2–3 minutes, then turn off the heat.
