
Fried pork kidneys with onions
Description
The dish is prepared without unnecessary complications. Kidneys are rich in selenium and B vitamins, contain a lot of protein and very little fat. Before cooking, kidneys can be soaked for several hours, changing the water, or sprinkled with baking soda for 20 minutes, then rinsed and cooked immediately. This method allows you to get soft and tender kidneys without extra effort. The finished dish can be served at the table.

Prepare the necessary ingredients.

Rinse the kidneys, cut them in half lengthwise, and remove all the ducts. Cut into large pieces and sprinkle with baking soda. Mix well and let stand for 20 minutes. Then rinse the kidneys under cool water several times until all the baking soda is completely removed.

Wash the kidneys thoroughly, dry well, and cut into strips.

Take a deep frying pan or a wok. It's better to use cast-iron cookware so that the kidneys fry rather than stew. Heat vegetable oil until smoking and fry the kidneys, stirring, until they firm up and develop a golden-brown crust.

Add the onion cut into thin strips. Fry, stirring, until the onion softens.

Add a couple of fresh rosemary sprigs. Cook for another 3-4 minutes over medium heat, stirring occasionally.
