
Pork chops in a crazy marinade

1. First, let's prepare the marinade. Remove the zest from the limes, finely chop the parsley, and slice the garlic into thin pieces. Grate the ginger on a fine grater, making sure no fibers get in. Cut the chili pepper in half lengthwise, remove the seeds, and slice crosswise into strips. For extra heat, you can leave the chili seeds in the marinade.

2. Then place the pepper, parsley, garlic, zest, and ginger into a mortar and grind into a smooth paste. Next, squeeze in the lime juice, add black pepper, salt, and olive oil, and mix well.

3. Cut the pork rib into four cutlets (on the bone). Rub the cutlets with the marinade, then place them in a bowl to marinate. Marinate for about forty to forty-five minutes. Cover the dish with plastic wrap.

4. Prepare a heavy-duty frying pan and heat the vegetable oil (medium-high heat). Remove the cutlets from the marinade, and fry them on both sides for about two minutes each.
