
Pork chops in marinade with salsa

1. Prepare the marinade. Squeeze juice from 2 limes and mix with ¼ teaspoon of zest. Slice the onion. Mince the garlic. Clean the jalapeño and chop. Mix all ingredients together in a large bowl.

2. Place the marinade in a resealable plastic bag and add the pork. Marinate in the refrigerator for up to 3 hours.

3. Prepare the salsa. Dice the mango, tomato, and jalapeño. Finely chop the red onion and cilantro. Squeeze the lime juice. Mix all salsa ingredients in a bowl. Add seasonings to taste. Set aside for 10 minutes.
