
Pork chops with apple chutney
Description
The recipe won't take much time. Preheat the oven to 200 degrees. Heat 2 tablespoons of olive oil in a skillet over medium heat. Season both sides of the pork cutlets with salt and pepper. Sear the cutlets until golden, about 2 minutes per side. Place the skillet in the oven and bake for about 5 minutes. Transfer the cutlets to a serving dish. Meanwhile, in a large saucepan, heat the remaining 2 tablespoons of olive oil over medium heat, add the onion. Sauté over medium heat until translucent, about 6 minutes. Add the apples and cook for 4 minutes. Stir in the vinegar, raisins, ginger, mustard, and cayenne pepper. Mix well, cover, and continue cooking, stirring occasionally, until the apples are tender, about 3 minutes. Season with salt and pepper. Serve the pork cutlets with the apple topping. Serve hot.
