
Pork medallions with side dish

Boil the peeled and coarsely chopped potatoes in salted water until cooked. Cut the cabbage in half. Turn the onion into a mince. Slice the tenderloin into medallions.

Meanwhile, place the cabbage in the oven to bake at 200 degrees. Add salt, pepper, and a spoon of oil to the cabbage. Bake the vegetables for 16 minutes.

Meanwhile, in a skillet with oil, sear the medallions for 4 minutes on each side. Then transfer the meat to a paper towel to drain excess fat.

In a skillet, reheat the oil. Add the onion and sauté for 2 minutes, stirring. Pour in the vinegar and add the thyme. After a minute, add the mustard and cream. Bring the sauce to a boil, then cook for 3 minutes, stirring. Finally, reheat the pork in this sauce, basting it.
