
Pork pockets with mushrooms and cheese

The recipe won't take much time. Earlier, I used to prepare pork pockets with mushrooms and cheese only for holidays, as they turned out so delicious that all the guests were absolutely delighted. I served the pork pockets individually to each person. Lately, I've started making pork pockets not only for holidays but also on weekdays, whenever I want to make dinner special and feed my husband something tasty and filling. So, read on for my recipe. Prepare all the necessary ingredients. Pork tenderloin is not required; shoulder works as well, as long as the slices are more or less even.

First, prepare the filling for the pockets. Clean the mushrooms and cut them into small pieces. Dice the onion. Sauté the mushrooms together with the onion until cooked.

Grate the cheese on a coarse grater and mix it with the fried onions and mushrooms while they are still hot.

Cut the pork into 3 equal slices and make a slit in the center of each to form a pocket. Season the meat with salt and pepper on the outside and inside the pocket.

Fill the pockets with the mushroom and cheese filling. Transfer to a baking dish and place in the oven for 40 minutes (temperature 170 degrees). Note: ovens may vary, so keep an eye on the meat's doneness.
