
Pork Loin in an Oven Bag
Description
Pork loin roast baked in an oven bag is a wonderful dish that can be served hot with side dishes or cold on sandwiches, as an appetizer, or for meat platters. Either way, it is very tasty, and it is easy to prepare. Serve the appetizer at the table.

Prepare the ingredients.

Rinse the meat well and pat dry with a paper towel.

Make shallow cuts with a sharp knife.

Grind all the spices with salt and olive oil in a mortar.

Fry the meat with the aromatic mixture, slice the garlic cloves into thin pieces, pierce the meat, and insert the garlic, bay leaf, and rosemary sprigs into the holes. Cover with plastic wrap and refrigerate to marinate for about 1 hour, or longer if desired.

Transfer the marinated meat into an oven bag, tie the ends, and poke several holes in the top with a toothpick. Place on a baking sheet or in a roasting pan. Bake in the oven for 1.5 hours at 180°C.

After 1.5 hours of baking, slit the film on top, open it, and baste the meat with the accumulated juices, then continue baking for about 30 minutes until golden brown.

Ready-made carbonade can be served as a hot dish with any side dishes, or chilled and used for cold sandwiches and appetizers.
