
Pork aspic with sauce
Description
Perfect for the table and with drinks. Making kholodets is not labor-intensive, except for the time it takes, as you'll need to simmer the meat for 3–4 hours. I promise the result will delight you, so stock up on ingredients and get cooking. Serve with fresh herbs and sauce.

First, clean and wash the pig trotters and shanks. Then cut the trotters in half lengthwise and chop the shank. Place the prepared meat in a deep pot, cover with cold water, and bring to a boil.

Skim off the foam that forms in the pot, add the vegetables, spices, and salt, and simmer over low heat until the meat begins to pull away from the bones. This process will take 3-4 hours.

When the broth has settled, skim off the fat that has formed and pour the broth into another container. Then strain it, add crushed garlic, ground pepper, and salt.

Separate the meat from the bones and cut it into small pieces. Arrange the meat in aspic molds, pour in the broth, and refrigerate until completely cooled.

To prepare the sauce, mix finely chopped pickled mushrooms or cucumbers with mayonnaise, mustard, and horseradish. Add salt and sugar.

Serve the finished aspic with sauce, garnished with thin slices of lemon and hard-boiled egg.
