Pork heart with beans and mushrooms

Description

The recipe won't take much time. Be sure to precook the pork heart beforehand, otherwise it will take a very long time to simmer in the pan. You can use beans in their own juice or in tomato sauce, whichever you prefer. If desired, you can add bay leaf and cloves to the sauce for extra aroma. Serve hot.

    Prepare the necessary ingredients. Make cuts in the heart up to the middle, then thoroughly rinse it several times under running water. Peel the onion, carrot, and garlic, then wash and dry them together with the mushrooms, tomatoes, and parsley.

    Place the heart in a large amount of cold water, bring to a boil and cook for about 15 minutes. Then drain the first water, rinse the heart thoroughly, cover with fresh water and simmer over low heat for another 30 minutes.

    Heat vegetable oil in a skillet, add chopped onion cut into half-rings and shredded carrots. Fry the vegetables for a few minutes over medium heat.

    Slice the almost cooked heart into strips, transfer to a pan, pour in a little water. Cover the pan with a lid and simmer for about 5 minutes.

    Cut the small mushrooms into quarters, transfer to a frying pan, and fry for another 3 minutes.

    Dice the tomatoes finely, chop the garlic, add to the pan, and simmer for about 5 minutes. Fresh tomatoes give the finished dish a pleasant tang.
