Thoroughly rinse the lungs and remove the trachea from them.

Wash and peel the carrots, parsley, celery, leek, and 1 onion. Cut into large pieces, pour over with hot water, and bring to a boil.

Place the lungs in a pot with the vegetables, add salt, bay leaf, and peppercorns. Cook covered over low heat for 1.5 hours. After cooking, drain the remaining liquid into a separate container. Let it cool.
