
Baked pork with garlic

The recipe is a bit complicated, but it's worth it. First, pour boiling water over the part of the pork belly with the skin. Pour thoroughly, evenly covering the entire skin surface. Then, dry the skin completely and, using a sharp knife (a dull knife won't work), make shallow cuts on the skin, as shown in the photo (crosswise cuts, spaced one centimeter apart).

Generously salt and let sit for half an hour at room temperature. If you're preparing it in summer, it's better to place it in a cooler spot (do not leave in the heat).

After half an hour, stuff the pork with finely chopped garlic. Be sure to insert the chopped garlic thoroughly into the slits, but also distribute it well over the surface. Don't skimp on the garlic—it should be plenty.

On the other hand, rub the pork with garlic as well.

Wrap the pork in foil and leave it for a couple of hours in a cool place. The pork should absorb the garlic aroma.
