
Pork in green sauce
Description
The dish is prepared without unnecessary complications. One of the most popular dishes of Mexican cuisine, made with meat and hot pepper. Serve the dish hot. It can be served with a side of boiled rice, bulgur, or eaten as is, dipping pieces of bread or tortillas into the sauce. The finished dish can be served at the table.

1. Wash the peppers and make cuts in them. Peel the onion and cut it into 4 parts. Take the garlic, separate it into cloves, but do not peel the skin. Place these ingredients into a baking dish and put it into the oven preheated to maximum temperature.

2. Bake in the oven until slightly blackened on both sides.

3. Remove the husks from the vegetable tomatillos and rinse them thoroughly. Make small cuts, place them in a baking dish, and put in the oven until they are slightly charred. Peel the roasted peppers, removing their skins, seeds, and stems. Peel the garlic. Place the peeled peppers, garlic, onion, and tomatillos into a blender and blend until no large pieces remain.

4. Wash and cut the pork into equal pieces (about 5 cm each). Season with pepper and salt.

5. Pour oil into a saucepan and heat over medium heat. Place the pork pieces in the pan so they do not touch each other. If all the meat doesn't fit, cook in two batches. Sear the pork on both sides until a brown crust forms.

6. Pour the broth into the pot with the meat and add the pepper mixture blended with vegetable husk tomato. If there are any burnt meat crusts left at the bottom of the pot, scrape them off and mix everything together. Add honey, cinnamon, cumin, oregano, and salt to taste. Bring to a boil, reduce the heat, and cook for 2.5 hours.

7. Serve the ready dish hot, garnished with fresh coriander and cheese.
