Step 1

1. This dish requires a fairly simple set of ingredients. The classic recipe for pork in tomato sauce does not require additional spices, but you can add various herbs and seasonings for meat if desired. If fresh herbs are not available, you can use frozen ones. If using fresh tomatoes instead of tomato paste, it's advisable to peel them first and chop the flesh.

Step 2

2. First, wash, dry, and cut the meat into portion-sized pieces. Pour a little oil into a pot or saucepan and heat over low heat. If the pork is fatty, you can reduce the amount of oil. Meanwhile, peel the onion and dice it finely. Add the onion to the heated oil and sauté until translucent. Then add the peeled and minced garlic (you can chop it or press it) to the pan. To achieve a richer color of the sauce, you can add about 1 tablespoon of paprika to the oil, although this is entirely optional.

Step 3

3. When the onion and garlic are sautéed, add the sliced meat to the pan. Mix thoroughly so that the paprika is evenly distributed and doesn't form lumps. Sear the pork over medium or high heat until a crust forms. Meanwhile, prepare hot water or broth (either meat or vegetable). Once the meat is seared, add the liquid. Bring to a boil, season with salt and pepper to taste. Simmer the meat over low heat until fully cooked.

Step 4

4. While the pork is simmering, you can wash and chop the herbs, as well as prepare the tomato paste. If the pork in tomato sauce is being prepared at home with fresh tomatoes, wash them, peel off the skin, and cut into small pieces. You can also use canned tomatoes in their own juice. When the meat becomes tender, add the tomatoes or tomato paste to the pan. Simmer for another 5 minutes.

Step 5

5. Fresh herbs are best added just before serving. After adding tomatoes, you can optionally add a little more salt and ground pepper. This dish pairs perfectly with any side dish—mashed potatoes, pasta, or porridge.
