Pork in beer

Description

Thanks to the added beer, the meat literally melts in your mouth, becoming juicy and velvety in texture. You can use either light or dark beer, depending on your preference. Don't forget spices and herbs, garlic, and bay leaf. Choose pork with some fat or on the bone, such as a hock or pork belly. Optionally, you can first simmer the meat in broth, then add the beer half an hour before the dish is ready.

    Prepare the listed ingredients. Peel the carrots and wash them together with the green onions. Cut the green onions, separating the white and green parts. Garlic can be added optionally.

    Remove the membranes and tendons from the pork, rinse under cold water, and cut the meat into portion-sized pieces. If preparing ribs, cut them so that each piece contains a bone. Heat vegetable oil in a cauldron or non-stick pot, then add the meat. Carefully stir and sear for about 4-5 minutes on one side.

    Then flip to the other side and sear for the same amount of time, flip again, and continue until the meat develops a golden crust.

    While the pork is frying, grate the carrots on a coarse grater. Add to the container. The vegetables should give their flavor and aroma to the meat and broth, so they are added together with the pork and simmered with it. If you want to get a less thick sauce, but extract all the benefits from the vegetables, add them 10 minutes before the end of simmering.

    Slice the white part of the onion into rings and add to the container together with the seasoning and ground black pepper. Add other spices and herbs according to your taste.

    Rinse the rosemary sprigs and place them on top. Once they have released their aroma (approximately by the end of cooking), remove the sprigs so they don't end up in the finished dish. Rosemary can be substituted with 2-3 bay leaves.

    Pour in light or dark beer and bring the liquid in the container to a boil. Then reduce the heat to moderate and cover the container with a lid. Simmer the pork in beer for at least 1 hour.

    Place the tomato sauce or substitute it with tomato pulp, peeled and skinned, or tomato juice.

    Then chop the green part of the onion and add it to the container. If you have any other fresh herbs, add them as well: dill, parsley, cilantro, etc. Simmer for 1-2 minutes and turn off the heat.

    Place the pork in beer on plates and serve with any side dish: boiled rice, buckwheat, pasta, mashed potatoes, etc. Enjoy your meal!
