This dish is quite simple to prepare—during holiday preparations, all you need to do is brush the pork with the marinade and put it in the oven.

Prepare all the necessary ingredients.

Rinse the pork for roasting (you can use tenderloin or loin) and pat dry. Make cuts about 1 cm deep on the surface, both lengthwise and crosswise.

Rub the pork with salt and pepper (don't forget the slits) and let it sit for about 15 minutes to marinate slightly.

Meanwhile, for the sauce, mix honey, lemon juice, and ketchup. You can adjust the proportions according to your taste preferences. However, I recommend not reducing the amount of honey, as this will give the meat a proper glaze. Instead of ketchup, you can use jam, for example, cranberry jam. It is sweet and sour and will pair well with the flavor of the meat. But I find that combined with honey, the sauce becomes too sweet and lacks flavor balance. Therefore, I prefer tomato-based sauces.
