Description

Pork cooked this way with red wine at home goes perfectly with any side dish and fresh vegetables. The meat turns out incredibly juicy, and thanks to the long slow cooking in the oven, it literally falls apart into tender fibers.

Instructions

    Step 1

    1. The recipe for pork in red wine calls for using adjika. If you don't have it on hand, you can use any spicy tomato sauce or combine chopped tomatoes with hot pepper.

    2. Choose a piece of pork with moderate fat content. Pork neck with bone works well. Wash the meat thoroughly, dry it with a paper towel, and rub it generously with salt and pepper on all sides. You can also add other meat seasonings if desired. Gradually spread adjika over the pork on all sides, literally massaging the marinade into the meat.

    3. Heat a small amount of vegetable oil in a skillet. Add the meat and sear over high heat for a couple of minutes on each side. This way, the crust that forms will keep all the juices inside the meat. Meanwhile, place half of the washed and dried herbs onto a baking sheet or in a baking dish. You can use whatever herbs you have on hand.

    4. Peel the garlic and lightly crush it with the knife. This will help it release more of its aromas into the meat during baking.

    5. Place the fried pork over the greens. Arrange the garlic cloves and remaining herbs alongside. Pour about 400 milliliters of wine into the bottom of the dish. Cover the dish with foil and place it in the preheated oven for approximately 1 hour.

    6. Then open the foil and, if necessary, add the remaining wine. The meat should not burn in the pan. In total, pork in red wine takes about 3 hours to cook at home. About half an hour before it's done, you can remove the foil so that the meat browns.
