
Pork in cranberry sauce
Description
The recipe won't take much time. Aromatic pork with a tangy sweet-and-sour cranberry sauce is a real festive dish. Serve hot.

Step 1

1. Preheat the oven to 220 degrees. Season the pork tenderloin with salt and pepper. Heat 2 tablespoons of olive oil and 2 tablespoons of butter in a skillet over high heat. Sear the tenderloin on all sides using tongs. Remove the skillet from the heat and place it in the oven for 10–15 minutes. Transfer the pork to a cutting board and let it rest.

2. Prepare the cranberry sauce. Rinse the cranberries under cool water. Place them in a saucepan. Pour in 1 cup of cranberry juice and 1 cup of maple syrup. Add orange juice, mix everything together, and bring to a boil. Reduce the heat and continue cooking for about 10 minutes, until the sauce thickens. Turn off the heat.

3. In a separate skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté for about a minute, then pour in the wine (if using) and chicken broth. Stir, then add the cranberry sauce. Cook over medium heat for 2–3 minutes. Add more chicken broth as needed to reach the desired consistency. Season with salt, pepper, and spices to taste, if desired.

4. Slice the pork tenderloin. Pour cranberry sauce on top. Serve with mashed potatoes.
