
Pork in sweet and sour sauce baked in the oven
Description
Sweet and sour sauces come in many varieties. The version I'm offering now resembles barbecue sauce. Of course, the list of ingredients is quite long, but the final result is worth it. You may end up with a generous amount of sauce, which can be stored in the refrigerator.

Start with the sauce: chop the onion into small cubes and sauté in oil until golden brown (about 5 minutes).

Finely chop 4 garlic cloves and add them to the onion, mix well. Then add all the remaining sauce ingredients (except for the meat, of course).

Bring the sauce to a boil, then simmer for another 30-35 minutes over low heat.

If you have a large piece of meat, make three partial cuts without cutting all the way through. Finely chop the garlic and mix it with salt and pepper. Rub the mixture thoroughly into the meat, especially in the cuts. Line a baking tray with foil and place the meat on it.

Pour the sauce over the meat from all sides, even rub it in. Preheat the oven to 180 degrees, cover the meat with foil, but not tightly. Roast for 1.5 to 2.5 hours. The meat is usually done within 1.5 hours. If the juice runs clear, without blood, when you pierce it—the meat is ready.

You can serve the ready pork in sweet and sour sauce with vegetables or a light side dish, for example, rice.
