
Pork in sweet and sour sauce with pepper

Wash and dry the pork (preferably tenderloin). Cut into small thin pieces and pound each piece on both sides. Place the meat in a deep plate, add a little soy sauce, chopped garlic, and sea salt. Let the pork marinate in the refrigerator for two hours.

Cut the peppers into evenly sized squares. If possible, use peppers of different colors for the dish—it will look very attractive. Peel the ginger and slice it into thin strips. Chop the carrots into rounds or small squares. Slice the chili peppers. If you prefer spicier dishes, leave the seeds in the peppers. Sauté all the vegetables in a pan with vegetable oil.

Now prepare the Chinese sauce. In a clean bowl, mix the remaining soy sauce, vinegar, sugar, salt, and starch. Dilute all the ingredients with a small amount of water and stir.

Add the pieces of marinated pork to the sautéed vegetables. Pour in the sauce and simmer for forty minutes over low heat after the sauce comes to a boil.
