
Pork in sweet and sour sauce with ginger

1. Prepare the necessary ingredients. Wash the vegetables and meat. Fresh ginger is ideal for this recipe, but if you don't have it on hand, use ground ginger instead.

2. Pat the meat dry with a paper towel and cut it into small strips of moderate thickness and length.

3. Transfer the meat to a deep, convenient container and marinate in soy sauce with starch. Mix thoroughly and let it sit for about 10–15 minutes.

4. Now it's time to prepare the vegetables for frying. Peel the onion, pepper, and carrot, then chop them into roughly similar sizes. I used a square grater for the carrot, and sliced the onion and pepper.

5. Add a few tablespoons of oil to the vegetables and sauté over medium heat until cooked through.

6. Place the marinated meat into hot oil, spacing the pieces apart, and sear over high heat for about 5 minutes until nicely browned. I used a small frying pan, so I cooked the meat in several batches.

7. Now, while the vegetables and meat are frying, prepare the sauce for the pork. Mix soy sauce with crushed garlic, sugar, tomato paste, vinegar, and ginger. Dissolve the starch in a glass of water and add it to the mixture. Stir well.

8. Add the sauce to the prepared vegetables.

10. Stir and bring the sauce to a boil. Remove from heat. The sauce thickens immediately. Before serving, generously sprinkle the dish with sesame seeds. Sweet and sour pork is ready.
