
Pork in pomegranate glaze
Description
The recipe won't take much time. This delicious smoky-sweet pork will take a worthy place on your holiday table. Serve hot.

1. Peel and mince 2 garlic cloves. Coarsely chop the chili pepper. Heat olive oil and garlic in a large skillet over medium heat until the garlic softens.

2. Add the chopped chipotle peppers and their sauce, tomato paste, dark brown sugar, dry mustard, molasses, and pomegranate juice to the skillet with the garlic. Mix together to combine all ingredients.

3. Squeeze the juice from the lemon. Simmer over low heat for 10-15 minutes until the sauce thickens. Remove the sauce from the heat and mix in the lemon juice.

4. Preheat the oven to 220 degrees. Heat olive oil in a large skillet over medium heat. Sear the pork on both sides.

5. Place the pork on a foil-lined baking sheet, brush with the prepared pomegranate glaze, and bake in a preheated oven for 10 minutes. Remove from the oven, brush again with the glaze, and bake for another 5-10 minutes. Let the pork rest for 5-10 minutes before slicing.
