
Pork in a cast-iron skillet in the oven
Description
The dish is prepared without unnecessary complications. I got this recipe for pork cooked in a cast-iron pot in the oven from my mom, who used to make it incredibly delicious. I don't prepare it often, as the cooking process takes quite a long time, so I end up drooling while waiting. But the final result—grateful family, amazed friends, and incredibly tasty pork—is well worth the wait. The finished dish can now be served.

First, prepare the spice mix: grind cumin, allspice, and black pepper in a mortar, then add mixed peppers and red pepper. Mix everything well.

Peel the garlic and cut it into strips or pieces—whatever you prefer—and stuff the "quail" with it. Rub the quail all over with spices.

Slightly unfold the "ryabchik" and stuff with prunes - 2 pieces each. Then roll back up.

Peel and cut the carrots and onion into not-too-fine half-rings.

Now we need to put everything into a cast-iron pot, greasing its walls with vegetable oil. We'll place the "quail" pieces on a bed made of half the vegetables, prunes, and spices, then cover them with the remaining vegetables and sprinkle with spices.

Add about a cup of water to the cast-iron pot, cover with a lid, and place in the oven for 45 minutes at 200 degrees, then reduce the temperature to 170 degrees and leave for another 2 hours or so.
